Custom chocolate creations from CocoaBistro

Since we last spoke with local chocolatier Audrey Brown, CocoaBistro has taken off. What began as an online business based out of Audrey’s home has moved into its own storefront and kitchen on Development Drive where she now makes all of her chocolates in-house. You can drop by and pick up a piece or two but CocoaBistro has found its niche with custom orders and wildly imaginative flavours. Sweeten up your wedding with custom chocolates personalized just for your special day.

CocoaBistro chocolates are made with a pure Belgian chocolate foundation made with Belgian Callebaut chocolate purchased locally from Tara Natural Foods and confections made with dairy products from Limestone Organic Creamery—but beyond that, if you can dream it, she can turn it into a mouthwatering flavour.

“The flavours that I once thought would be really experimental have ended up being the ones that people seek out,” she says. “My personal favourite is the Limoncello Basil, which combines Limoncello liqueur with fresh basil. Wasabi and Smoky Vanilla are two of my newest favourites.”

While she is a master of classic chocolate flavours, Audrey isn’t afraid to get experimental, either, “I’ve also created a variety of recipes based on different cultures: tamarind and chili in a recipe that represented Mexico, and chocolates with matcha green tea for Japan. I even created my own version of a Ferrero Rocher called ‘Nuts ‘Bout U’. I cannot keep that flavour in stock; everybody loves it.”

If you’re seeking out something special to wow your guests or you’re looking for a non-traditional centrepiece, let Audry from CocoaBistro whip you up an incredible concoction.

The possibilities for unique chocolate are endless. Not only are the flavours out of this world, but CocoaBistro’s signature look helps them stand out from the box. Delightfully dipped, swirled, and drizzled, a box of CocoaBistro chocolates can be expertly matched to your chosen colours.

“A few years ago, I catered for a wedding at Fort Henry, one of the most gorgeous venues in town in my opinion,” says Audrey. “I arrived with the order of six-boxes for the guests. They were highly customized, right down to the colour of the ribbon on each box, and everything matched the wedding setup perfectly. To see everything come together down to the smallest detail? The wow-factor was incredible.”

During your free one-on-one consultation, bring Audrey a fabric or colour swatch and she can match the ribbon, the box, and even the chocolate’s filling to your colour palette. If you have a special shape in mind, chances are Audrey has the perfect mould. If it can’t be shaped? Try a custom edible logo.

“I work with a number of great suppliers that help me make everything possible,” says Audrey. “Weddings are an investment, I want to make sure my customers can personalize the experience. Chocolate can go a long way to add a special touch to a perfect day.”
