Kingston Cocktails: Vol. 2

We knew our last feature on Kingston’s cocktail scene was going to be popular, so we’re following it up with Volume Two featuring some pretty impressive beverages from AquaTerra/The Vu.
Most know of AquaTerra for their impressive menu backed by their commitment to distinctly Canadian food and wine, and years of exemplary meals and service have earned them the title of Kingston’s premiere waterfront dining destination. Tucked away in the Delta Kingston Waterfront Hotel, you simply can’t beat the gorgeous views of the waterfront. Visitors can also spend some time at The Vu, a hip little bar in the lobby of the Delta serving up mixed drinks and great times.
But what about their cocktails? Given AquaTerra and The Vu’s reputation, I was expecting nothing less than perfection and wasn’t disappointed.

AquaTerra Cosmo Martini

First up: the AquaTerra Cosmo Martini, a staple for any die-hard Sex in the City fan or general Cosmo-enthusiast. But forget the cranberry juice – at AquaTerra they switch things up by mixing this drink with mandarin vodka, pomegranate liqueur, pomegranate juice and Grand Marnier for a flavourful cocktail with a smooth finish that even Carrie Bradshaw would approve of.

Traditional AquaTerra Caesar

There’s nothing better than a well-prepared Caesar, and it just so happens that AquaTerra offers two of them. The first is the Traditional AquaTerra Caesar and is made as you would expect; vodka, Clamato juice, Worcestershire sauce and a mix of spices. But what takes this one over the top is that it’s punched up with grilled chorizo sausage and rimmed with Montreal steak seasoning. When your drink can double as an appetizer, you know made a great choice.

 The Exotica

If you’re looking for a delightfully refreshing summer drink to sip on while enjoying views of the waterfront, the Exotica is just the ticket. Made with Alize Red, raspberry vodka, orange juice, pineapple juice and then garnished with fresh fruit, this is the kind of drink you would expect to find being served along a sandy beach or enjoyed under a palm tree. Save the airfare and try it in Kingston.

 AquaTerra Seafood Caesar

If grilled chorizo sausage on your Caesar isn’t your thing, consider this other option from AquaTerra with the flavourful addition of horseradish seafood sauce. This bold Caesar is rimmed with smoky salt and garnished with shrimp and lemon – after you try this one, bottled Caesars just won’t taste the same.

Stone Fruit Sangria

Sangria lovers rejoice because this medley of flavours is your perfect summer companion. Made with sparkling peach cider, peach schnapps, Riesling wine and orange juice, it tastes even better than it looks. Garnished with peach slices, raspberries, lemon and orange slices you could probably get away with calling it a fruit salad. Clean eating, right?

The Flirtini

The gentlemen reading this piece may have their reserves about casually sipping this hot-pink concoction at The Vu’s bar, but they would be missing out. The friskily-named Flirtini is made with Alize Red, Absolut Citron, lychee juice and is reminiscent of fresh pink lemonade. Garnished with sugared blueberries, it’s the perfect drink to enjoy while unwinding after a long day at the office or touring around Kingston.

Cupcake Martini

This festive cocktail is as versatile as it is delicious. Celebrating someone’s birthday? Done. In the mood for dessert, but would rather drink it? No problem. The cupcake martini (or, party in a glass, if you will) is made with vanilla vodka, Bailey’s Irish Cream, Kahluah and cream (so, maybe it’s not the best choice if you’re lactose intolerant or on a diet). Topped with whipped cream and party sprinkles, this drink demands party time.
